Sarie has been a beekeeper for twenty-six years. Her hives sit on white-sand fynbos plains, on renosterveld farms and in a few apple orchards in the Elgin Valley. She bottles each apiary separately. The fynbos honey is the one we put out for breakfast. Dark, slightly tannic, never the same year to year.
She brings us honey in twenty-litre buckets every six weeks and we decant it ourselves. The wax goes into candles we sell at Christmas.
